Ingredients
1 cup green or brown lentils (pref. green)
¾ cup white or brown rice (pref. white)
2 white or yellow onions, sliced in rings (pref. white) – it seems like a lot, but trust me, they cook down
¼ cup olive oil
1 tsp minced garlic
1 tsp salt
1 tsp cumin
½ tsp pepper
Instructions:
- Bring lentils to a boil in 2-1/2 cups lightly salted water (about ½ tsp salt). Cover and simmer 15 minutes. Set aside.
- Meanwhile, heat olive oil in a large skillet over medium heat. Add onions and garlic and sauté about 12 – 15 minutes – until onions are golden. Remove and set aside ½ onions.
- Add rice, salt, cumin, and pepper to skillet, cooking and stirring about 3 minutes.
- Stir in lentils with liquid and another cup of water. Bring to a boil – reduce heat, cover and simmer about 15 minutes – until rice is tender.
- Top with remaining onions.
Serve with yogurt or sour cream.
