This is a basic “starter” recipe with many possible variations.
Prep Time: 15 minutes Cook Time: 45 minutes Servings: 6
Ingredients:
- 8 eggs, beaten
- 1 cup green onions, sliced
- ¼ cup flour
- 3 cups fresh spinach, chopped (or 10 oz pkg frozen)
- 16 oz cottage cheese (or ricotta)
- 16 oz cheddar cheese, grated (or jack or mozzarella)
- 2 Tbs olive oil
- Salt & pepper to taste
- ½ tsp garlic powder
- ½ tsp paprika (optional)
- Pinch red pepper flakes (optional)
- ½ tsp red pepper sauce (optional)
- ½ cup bell pepper (optional)
- ½ cup mushrooms (optional)
Instructions:
- Preheat oven to 350 degrees. Spray 9 x 13 baking dish with cooking oil.
- Heat olive oil in skillet over medium heat. Sauté all vegetables 2 – 4 minutes. Set aside.
- Beat eggs in a mixing bowl. Add flour, vegetables, cottage cheese, 12 oz cheddar cheese, and all spices. Mix until smooth and well mixed.
- Pour mixture into baking dish and bake for 30 minutes. Top with remaining cheddar cheese and cook another 15 minutes or until golden brown.
- Let set for about 10 minutes and cut into 6 squares.
Serve with parmesan cheese, pepperoncini, jalapeno slices, salsa, and/or ???
