I’m starting a new category for healthy recipes. This is a great vegetarian meal.
Prep Time: 15 minutes Servings: 4
Ingredients:
- 1 15-ounce can black beans
- 1 cup pepper jack cheese
- 1/4 cup salsa
- 4 8-inch tortillas
- 2 teaspoons canola oil
Instructions:
- Rinse beans and combine with cheese and ¼ cup salsa.
- Heat 1 teaspoon of oil in skillet over medium heat.
- Place 1 rounded cup of filling on one tortilla and add to skillet – place another tortilla on top – press down with spatula.
- Cook 1 to 2 minutes on each side – until golden brown.
- Remove to plate and cover to keep warm.
- Repeat with remaining two tortillas.
- Let set for about 5 minutes and cut each quesadilla in half.
Serve with salsa, guacamole, and/or sour cream.
